2 cut-up fryers
1 cup minced onion
4 minced peeled cloves of garlic
1 can tomato sauce 8 ounces
3 3/4 teaspoons salt
1/2 teaspoon ground allspice
1/2 teaspoon leaf thyme
6 tablespoons fat or salad oil
3/4 cup minced green pepper
3 1/2 cups tomatoes
1/2 cup Chianti wine
1/2 teaspoon pepper
2 bay leaves
Dash cayenne pepper

FRY chicken until brown.
ADD rest of ingredients, MIX thoroughly and ADD chicken.
SIMMER uncovered 30 to 40 minutes. SERVE in the sauce with French bread.
